I wont pretend to talk in the third person about myself, instead let me tell you a bit about me and how 110.232.142.129/~brisba22 came about. At the time the domain name 110.232.142.129/~brisba22 came up for purchase I was a stay at home mum in the middle of a degree centred around journalism and PR. a couple of years earlier I had been contemplating returning to my previous career in marketing management and for a while I even tried. 3 months into a new role and it was clear that I had no passion for my old life and to make the decision to quit easier, my almost 2 year old at the time was not coping with childcare. So, as a family we made the decision for me to return to becoming a stay at home mum. About 1 years later or so.. 110.232.142.129/~brisba22 came up for sale. My friends had often commented on my ability to know exactly what was happening in Brisbane for kids. I had my son enrolled in some awesome activities and we often visited some great destinations. 3 Easy Easter Food Platter Ideas

Easter seems to have crept up on us especially quickly this year! Term one has flown by and now it’s time to think about relaxing for the extended weekend.

Here are 3 of our favourite tasty Easter treats you can serve over the long weekend. A definite plus is that they’re all chocolate-free (because there’s probably more than enough of that arriving from the Easter Bunny!).

Best of all, Brisbane kids can easily help prepare all 3 of these dishes, which usually means they’ll help eating them too. We’ve included some ideas about steps Brisbane Kids might like to help with, but you know your kids and their skills better than we do.  We’ve also included some ideas about how you might like to change up these recipes based on your tastes and what’s available near you.  

Eggy Carrot Wraps

These tasty wraps are fairly healthy and easy to make. They can be made a little ahead of time and stored in the fridge ready for your little bunnies to eat when they want a break from the chocolate. 

What you need:

  • Round flatbread wraps, cut in half
  • Hard-boiled eggs
  • Mayonnaise
  • Carrots, grated
  • Lettuce
  • Salt and pepper to season to taste
  • A few sprigs of parsley (to serve as carrot tops)

Eggy carrot wrap filling

Method:

Peel and mash the hard-boiled eggs roughly with a fork. Add the mayonnaise and grated carrot and stir until combined, seasoning to taste. 

Place some of the egg mixture on your half wrap with some lettuce and a sprig of parsley making out on the round side.

Roll your flatbread into a cone shape and your ‘carrot’ is ready to eat!

Kids can help with:

Peeling and mashing eggs

Grating carrots

Stirring the mixture

Washing lettuce

Rolling the wraps

Change it up:

You can mix up the fillings to your taste. You could try salad wraps with avocado, or curried egg wraps, or even add in some grated cheese or tuna if that’s more your thing!

Easter Bunny’s garden plate

Crisp, fresh vegetables and yummy dips – you can’t go wrong with this healthy platter to counteract the sweet consumption over Easter!

What you need:

  • Carrots
  • Cucumber
  • Capsicum
  • Hummus
  • Smashed avocado

Method:

Slice the veggies into finger-sized pieces.

Arrange in a circle on a round plate.

Add hummus and avocado to the centre.

Dip and enjoy a very tasty but delicious food platter!

Kids can help with:

Washing and preparing vegetables

Cutting (younger kids can cut cucumber halves with a butter knife)

Preparing dips

Arranging veggies on the platter

Change it up:

Choose vegetables that you know your Brisbane Kids will enjoy or might try. Other options include celery, tomatoes or radishes.

Mix up the dips! Use your favourites. 

If you have a sweet tooth, you could try a fruit platter with things like banana and strawberries and have peanut butter and/or Nutella in the middle as a dip.

Fairy Bread Hot Cross Buns

Yes! We’ve made hot cross buns event sweeter with this super-cute method for turning them into the ever-popular treat – fairy bread!

What you need:

  • Hot cross buns (mini size if possible but any will work)
  • Butter or spread
  • Sprinkles

Method:

Fill a plate or dish with sprinkles.

Halve the hot cross buns. Spread the inside with butter. 

Press the buttery surface into the sprinkles.

These are best eaten soon after making them (and good luck trying to get them to last!).

Kids can help with:

Cutting the buns

Buttering the buns

Pressing the buns into the sprinkles

Change it up:

You could create a hot cross bun buffet with different spread and topping options (use peanut butter or Nutella instead of butter) and top with slices of strawberry or banana, or try grated chocolate or crushed up easter eggs instead of sprinkles.
