Makes approx. 35 cookies
Ingredients:
½ cup unsalted butter, softened
½ white sugar
½ cup soft brown sugar
1 egg, beaten
¾ desiccated coconut, toasted
Zest and juice of 1 lime
2 cups of plain flour
1 tsp baking powder
½ tsp bicarb soda
Method:
Preheat oven to 180* C
Toast coconut by cooking it in a frypan on medium high heat until the oils are released and it lightly browns. Stir it constantly as it can burn very easily and quickly. Set aside.
Mix flour, bicarb and baking soda in a bowl until well combined.
In another bowl cream the softened butter and sugars. Add lime juice, zest, beaten egg and mix well.
Add flour and mix till it forms a dough.
Place teaspoonful’s of the mixture on a lined baking tray and bake for 12-15 mins or until golden.
