We all know that feeling — you’re running low on food supplies, you don’t have time to nip to the shops, the kids need a healthy meal that you know they’ll enjoy, and you don’t have long to make anything. Well, this recipe is sure to become a firm family favourite! It’s healthy, it’s tasty, and above all, it’s easy! No more dried packet noodles laden with salt or MSG, just simple ingredients straight from your pantry!
This is also a great recipe for kids to help make too (with due supervision around kitchen equipment and boiling water). They will love the sensory experience of getting the sticky dough all over their fingers, and knowing they made it themselves somehow always seems to guarantee they eat more of their dinner.
YOU WILL NEED:
- 1 ½ cups plain flour
- 3 eggs (2 whole eggs and 1 yolk only)
HOW TO MAKE TWO-INGREDIENT EGG NOODLES
STEP 1
Put the flour into a large bowl. Make a well in the centre, then add the eggs and egg yolk. Mix together until it forms a dough.
HINT: To make this recipe even simpler, you could mix and knead the ingredients using a food processor with a dough tool.
STEP 2
Knead the dough on a well-floured surface until it is smooth and firm. You may need to add extra flour until the dough is no longer sticky. Then cover the dough in cling wrap and rest for 15 minutes. (You can rest it for longer, even overnight, but this should be done in the fridge.)
STEP 3
Using a floured surface and rolling pin, roll out the dough as thinly as you can.
STEP 4
Cut the rolled out dough in half. Roll up one half and then slice it into noodles. You can make the noodles as thin or fat as you like, but make sure they are all evenly sized to ensure an even cooking time. Repeat with the other half of dough.
HINT: On our first attempt, the noodles turned out thicker than we’d expected. Doing them again, we’ve found the thinner the better with this recipe. If you have a pasta machine, this will be even easier.
STEP 5
Boil in salted water, stock or broth for two to three minutes, or until they are tender and rise to the surface.
STEP 6
Enjoy! You can serve the noodles simply drained as a side dish, mixed with a sauce such as sweet chilli or hoi sin sauce, mixed with veges and meat as a stir-fry, or in stock as noodle soup.
