If you have a passion fruit vine that is fruiting, we’ve got a delicious pudding recipe that will have you scraping the bottom of the bowl for every last bite!
Ingredients
- 4 eggs, separated
- zest 1 lemon
- 200 g caster sugar
- 130 g butter
- 60g plain flour
- pulp of two passion fruit
- 260 g milk
Method
Preheat oven to 180 degrees and place a large baking dish filled halfway with water on the middle shelf.
Whip the egg whites until light and fluffy. Set aside.
Mix the egg yolks, butter, flour, and milk (with an electric mixer) until well combined.
Add the sugar, lemon zest and passion fruit pulp. Combine.
Fold in the egg whites. Pour mixture into a greased dish.
Bake uncovered in the water bath for 40 minutes, or until the centre is set like custard.
Serve with ice cream. Enjoy!
Passion fruit tips
If you’ve got an excess of passion fruit, you can store them in the fridge for up to three weeks. Alternatively, you can freeze the pulp in ice cube trays – it’s lovely in fruit juice, soft drink or cocktails. Ensure the fruit ripen on the vine so that they have time to sweeten, unless you like them tart! You don’t have to cook with them, you can enjoy passion fruit fresh off the vine as a nutritious snack.
