The lead-up to Christmas is an extremely busy time for families, so when we’re faced with the prospect of having to make something for an end-of-year school party, bring a plate for a street Christmas do, or create something homemade and yummy as gifts for teachers or friends, we want something quick, easy and delish. This super simple three-ingredient Christmas shortbread recipe ticks all those boxes!

You Will Need:
- ½ cup caster sugar
- 250g butter
- 3 cups plain flour
How to Make Three-ingredient Shortbread
Step 1
Pre-heat the oven to 160°C. Line a baking tray with lightly greased baking paper.
Step 2
Put the caster sugar and butter in a large mixing bowl. Then cream the butter and sugar. Adults and carefully supervised older kids could do this using an electric hand mixer, while other kids (or anyone wanting to burn some calories!) can beat it by hand with a wooden spoon.
Step 3
Add a cup of flour to the mixture and mix using a wooden spoon until the flour is all mixed in. Repeat the process with the remaining cups of flour.
Step 4
Bring the dough together into a large ball. You do not need to knead or work the dough. On a lightly floured surface, gently roll the dough to about 1.5 to 2cm thick.
Step 5
Cut out shapes using Christmas cookie cutters or simple round or star shapes. Then place on the lined trays.
If you wish to make traditional shortbread fingers, here is a simple cheat. Just place your ball of dough into the centre of a fairly shallow baking tray, then roll it to fill the tray, using the edges of the tray to ensure you don’t roll the dough too thin. Then slice it into finger shapes and use a fork to mark it. Use a rectangular tray for even more traditionally shaped biccies!
Step 6
Bake the shortbread in the oven for 12 to 15 minutes, depending on the thickness of the dough. Due to the high butter content, make sure you check the shortbread frequently to make sure it doesn’t burn.
Remove from the oven when lightly browned and leave to cool.

Give as a gift to teachers or classmates, or enjoy with family and friends!
