I wont pretend to talk in the third person about myself, instead let me tell you a bit about me and how 110.232.142.129/~brisba22 came about. At the time the domain name 110.232.142.129/~brisba22 came up for purchase I was a stay at home mum in the middle of a degree centred around journalism and PR. a couple of years earlier I had been contemplating returning to my previous career in marketing management and for a while I even tried. 3 months into a new role and it was clear that I had no passion for my old life and to make the decision to quit easier, my almost 2 year old at the time was not coping with childcare. So, as a family we made the decision for me to return to becoming a stay at home mum. About 1 years later or so.. 110.232.142.129/~brisba22 came up for sale. My friends had often commented on my ability to know exactly what was happening in Brisbane for kids. I had my son enrolled in some awesome activities and we often visited some great destinations. Easy No-bake Milo Cheesecake

Cheesecake recipe for cooking with kids

Are you looking for an easy and delicious treat to make for this Australia Day or just a delicious dessert to whip up with your kids? Well this No-bake Milo cheesecake is easy, so yummy and very Aussie! We’ve created a really simple recipe that you can make in just minutes and what’s more, you don’t even have to bake it!

This recipe requires time to set in the fridge, so make sure you start before you need it. You can even make it ahead of time and freeze it — it’s just as delicious defrosted, or straight from the freezer on a hot day!

You Will Need:

Cheesecake recipe for cooking with kids

  • 150g plain, not-too-sweet biscuits (e.g. digestives, granitas)
  • 80g butter (low salt or unsalted preferable)
  • 300g cream cheese (full fat version as low fat tends to be too runny)
  • 1 tin (397g) sweetened condensed milk
  • 300ml double cream
  • 5tbsp Milo
  • Vanilla extract (optional)

How to Make No-bake Milo Cheesecake

Step 1

Cheesecake recipe for cooking with kids

Blitz the biscuits in a food processor or put them into a zip-lock bag and bash with a rolling pin till fine crumbs.

Melt the butter in a saucepan over a low heat. Then add the biscuit crumbs and stir until they are all coated in butter.

Step 2

Cheesecake recipe for cooking with kids

Pour the biscuit mixture into a spring form or loose based cake tin. Press down with the back of a spoon to form a firm, even base. Then put it in the fridge.

Step 3

Put the cream cheese in a large mixing bowl. Soften the cream cheese with an electric mixer or wooden spoon.

Mix 3 tablespoons of Milo with a splash or two of cold water to form a paste (make sure the Milo is nicely dissolved). Add the Milo paste, condensed milk and a few of drops of vanilla extract (if using) to the cream cheese and mix again until there are no lumps.

Step 5

Cheesecake recipe for cooking with kids

Whisk the double cream using an electric mixer or hand whisk until it forms soft peaks. Then gently fold the cream into the cream cheese mixture. Gently pour on top of the chilled base and put the tin back in the fridge. Leave to set for at least 3-4 hours or preferably overnight.

Step 6

Once the cheesecake has set, remove it from the tin and dust the top with the remaining Milo powder using a sieve. You can even use a baking paper cut-out template to create a design to match your theme!

Step 7

Cheesecake recipe for cooking with kids

Enjoy this yummy cheesecake with family and friends! If it’s a hot day, it’s best to keep it in the freezer until you need it. We recommend serving with fruit such as raspberries to cut through the sweetness. We also recommend slicing the cheesecake while still cold from the fridge or frozen as it is a lot easier and less messy!
