  • AboutBrisbane Kids Creative was created by me! Ngaire Stirling. I wont pretend to talk in the third person about myself, instead let me tell you a bit about me and how 110.232.142.129/~brisba22 came about. At the time the domain name 110.232.142.129/~brisba22 came up for purchase I was a stay at home mum in the middle of a degree centred around journalism and PR. a couple of years earlier I had been contemplating returning to my previous career in marketing management and for a while I even tried. 3 months into a new role and it was clear that I had no passion for my old life and to make the decision to quit easier, my almost 2 year old at the time was not coping with childcare. So, as a family we made the decision for me to return to becoming a stay at home mum. About 1 years later or so.. 110.232.142.129/~brisba22 came up for sale. My friends had often commented on my ability to know exactly what was happening in Brisbane for kids. I had my son enrolled in some awesome activities and we often visited some great destinations. Amazing Pancake Grazing Platter

Pancake Grazing Platter

The grazing platter trend has hit with force and for quite a while now they have become the popular choice for any fancy and hip celebration or party.  We hope your family enjoys this amazing pancake grazing platter as much as ours!

Whether it is with fruit, savoury items, cheeses or breads and dips, the idea of a selection of items that complement each other being creatively laid out on a platter to ‘graze’ from has become a popular trend, not only for the ease in which it allows its host to cater for many but also for its aesthetic appeal.

If you are hosting a special breakfast, brunch or afternoon event, then one grazing platter that shouldn’t be overlooked is the pancake platter.  Super easy to do but pleasing for kids and adults alike, below are the simple steps to create your own Pancake Grazing Platter.

Pancake Grazing Platter Ingredients

Pancakes and fruit

Pancake Ingredients

  • 1 cup of Self-Raising Flour
  • 3 Tablespoons of caster sugar
  • 1 Egg
  • 1/2 Cup of Milk
  • 2 Teaspoons of melted butter
  • A pinch of salt

Decorative and Toppings

  • 1 x grazing board
  • A selection of different sized bowls
  • Strawberries / Blackberries / Raspberries
  • Bananas
  • Jams (preferred flavours)
  • Whipping cream
  • 1 x passionfruit
  • Sugar
  • 1/2 cup of Icing Sugar

Now, you may already have a pretty good pancake recipe, but the one listed in this article is super simple and is pretty much foolproof when it comes to creating super light, fluffy and DELICIOUS pancakes.  I actually usually triple this recipe to make a huge batch as my husband and kids love them so much.

Step 1

Flour and sugar in bowl

In a bowl, place your flour and sugar and stir with a wooden spoon until combined.

Step 2

Add your eggs and milk to the dry ingredients and mix these all together until combined.

Pancake Mixture

Finally, add in your butter and a pinch of salt, stirring and mixing until everything is combined and the mixture is smooth.

Step 4

Set your frying pan to a medium heat and add in a couple of spoons of butter.  Spoon into your pan the mixture.  For the size pancakes in our platter, we used 1.5 tablespoons per pancake.

Once the pancakes become full of air bubbles, flip them over.  When the underside is also browned lightly then they are done!  Repeat the process – it is THAT simple.

HINT: It’s almost a law that the first few pancakes you cook in the pan will not colour as well as those that come later.  Don’t worry, for some reason the next lot you cook will tan beautifully (and the first ones taste just as delicious anyway).

Step 6

Pancake Grazing Platter

Now all that’s left is to lay out your pancakes, fruit, jams, sugar and other elements (whatever tickles your fancy!) onto your grazing board.  You can really have a little fun with this and add on as little or as much as you like.  When you are done, sifts a small amount of icing sugar over the pancakes and voila! – your perfect pancake grazing platter is complete.
