When stores are short in supply of the usual pantry staples like flour and eggs, it’s time to get creative in the kitchen! These delicious cookies have just two ingredients, but can be added to with anything you have on hand to mix things up and make them extra yummy! What’s more, they don’t contain flour or added sugar, so they’re super healthy, and yet still deliciously sweet!

- 1 cup oats (use gluten-free oats if required)

These cookies are great with just the two main ingredients, but if you want to make them even more special, why not add a little something extra? We made some plain, some with pumpkin seeds, some with raisins, and some with chocolate chips!
Just a small scattering of each is enough to boost the flavour and variety. Here are some options to try, but just stick to one or two per batch or per cookie, not all at once! And feel free to experiment with your own ideas too!
- 1/2 tsp ground cinnamon
- 1/2 tsp ground nutmeg
- Raisins
- Pumpkin seeds
- Chocolate chips

How to Make Two-ingredient, No-flour Cookies
Step 1
Pre-heat the oven to 180°C and line a baking tray with baking paper or a reusable baking sheet.
Step 2
Peel the bananas, put them in a mixing bowl, then mash them with a fork until smooth. The more ripe the bananas are, the easier they will be to mash, and the sweeter the cookies will taste!
Step 3
Add the oats to the banana and mix the ingredients together. You will get a slightly different texture of cookie depending on whether you use traditional whole oats or smaller-cut quick oats, but both are equally tasty!
Step 4
Add in any optional extras. You can add these to the whole batch of cookie dough, or in small amounts to separate cookies to experiment with a range of different varieties.
Step 5
Arrange spoonfuls of the mixture into cookie shapes on the baking tray.
Step 6
Bake for about 15 minutes, or until golden brown. The cooking time will vary slightly depending on what types of oats you use, so be sure to check on them. Then leave to cool before eating!
These cookies turn out crispy on the outside and chewy on the inside. Using just fruit and oats, they can even be enjoyed as a breakfast alternative, especially if you need something quick and easy to enjoy on the go. They will keep in an airtight container for up to two days. They can also be frozen, making them a great option to have on hand for lunchboxes.
