Combining our love for this decadent chocolate and malt-layered treat with another favourite (and cooling) sweet, this three ingredient recipe for Tim Tam Ice-Cream is simple to make and absolutely delicious to eat!

What you need to make Tim Tam Ice-Cream

It is just three very simple ingredients that you will need to make this delicious Aussie dessert!

  • 200g packet of Tim Tams
  • 395g tin of condensed Milk
  • 600ml of thickened cream

How to make your own Tim Tam Ice-Cream

Step 1:

Crush your packet of Tim Tams in either a food processor or, if you prefer chunkier pieces in your ice-cream, do so by placing them in a bag and gently crushing with a wooden roller.

Step 2:

In a separate bowl, whip the thickened cream with electric beaters until it is thick and fluffy.

Step 3:

Gently fold the condensed milk into the cream.  It is best if you pour this in over three different stages, folding it into the cream until it is well combined before than adding a little more.  When the condensed milk is completely combined with cream, then do the same with the crushed Tim Tam biscuits.

Step 4:

When you have completely combined the whipped cream, crushed Tim Tam biscuits and condensed milk, transfer the mixture to a freezer-proof container and pop into the freezer overnight (or for at least 6 hours).

Step 5:

Once the ice-cream has set you can enjoy it with your kids!  If you are serving this to guests, we love to sprinkle a bit of crushed Tim Tam over the top and add a few cut up parts from the Tim Tam to it as well for decoration.

  • Black Food Colouring Gel

Step 1:

Place a generous amount of icing (bought pre-made or made by you beforehand) into a bowl and then colour with the black food gel until you have a gentle koala-grey colour.

Get the white marshmallows and cut each one in half horizontally. The marshmallows in our packet where bigger than usual ones and so we cut ours into three. Place one on each side of the Arrowroot biscuit to make the koala’s ears.

To make your delicious and very Australian Mint Slice Christmas Balls you will need:

  • One packet of Mint Slice biscuits
  • Red Smarties
  • 200g of milk chocolate
  • One packet of Spearmint Leaves
  • 125g of Cream Cheese

How to make your Mint Slice Christmas Balls

Step 1:

Process your packet of Mint Slices until they make up a fine crumble mixture.

Step 2:

Cut the cream cheese into small squares and mix in a bowl with the Mint Slice crumbs until it is completely combined. You can mix it with a wooden spoon or with your hands (which is what we found to be more effective and quicker.

Step 3:

Using a teaspoon of mixture, roll these into small balls between your palms and place on a plate.  When they are all done, put this in the fridge to set harder while you prep some other ingredients.

Step 4:

While the chocolate balls are in the fridge, carefully slice up the mint leaves. This involves cutting them in thin vertical strips. Each mint leaf will probably have 4-5 strips. Also, pick out all of the red smarties and lay on a plate with the mint leaves.

Step 5:

Melt the chocolate in a bowl in the microwave until it is thin and warm.  Add this to your assembly plate and take the prepared chocolate balls out of the fridge.

Step 6:

With a small skewer or fork, gently dip each of the chocolate balls into the melted chocolate and hold above the bowl until any excess has finished dripping off.  Drop the ball onto a plate (with baking paper on it) and then, while the chocolate is still warm, add one Smartie and two Mint Leaves on the top. When they are all done, pop them in the fridge to set.

To make your Tim Tam Truffles you will need:

  • One packet of Tim Tam biscuits.
  • 1/4 cup of Sweetened Condensed Milk
  • 2 teaspoons of additional Condensed Milk
  • 1/2 Cup of Desiccated Coconut

How to make your Tim Tam Truffles

Step 1:

Tip your entire packet of Tim Tams (no sneaking any!) into a food processor.  Blend them until they resemble large crumbs.

Step 2:

Pour in 1/4 cup of your condensed milk and blend.  When this is done, add an additional two teaspoons to your mixture and blend briefly until it is all combined. The mixture should be sticking together but not wet and soggy to touch.  If it is a little too dry to hold, add another teaspoon of condensed milk.

Step 3: 

Roll approximately a teaspoon of the mixture between your palms until you have a perfectly round sphere.  The mixture should stick together perfectly.

Step 4:

Put 1/2 cup of desiccated coconut in a bowl. Roll the ball in this and then set to the side on your serving tray.

Step 5:

When you have rolled all of your Tim Tam Truffles through the coconut and placed on a tray these can be put in the fridge to set.  They only really need about 15 – 30 minutes to be perfect.  They are best stored in a container in the fridge to help them keep their shape and freshness longer.

Alternate Options

You can try alternate recipes to get different coatings and flavours for your Tim Tam Truffles.  Using other flavoured Tim Tams is fun – although with white Tim Tams (which are DELICIOUS) you may need slightly less condensed milk.

You can also consider coating them in a thin layer of melted chocolate or in small chocolate flakes too!  Yum!

Combining these iconic chocolate biscuits with just a few extra ingredients and topped with a layer of chocolate, these delicious treats are simple to make, require no baking at all and are something the kids will love helping create.  No doubt they will love helping you eat them when finished too!  To make your own No Bake Tim Tam Slice, just follow our simple recipe and steps below.

What you will need to make your No Bake Tim Tam Slice

To make the Tim Tam Slice you will need the following ingredients:

  • 600 grams Tim Tam biscuits (3 packets)
  • 397 grams sweetened condensed milk
  • 60 grams butter
  • 200 grams dark chocolate melts
  • 1 tbs olive oil

How to make your No Bake Tim Tam Slice

Step 1:

Line a large baking tray with baking paper, making sure some goes up the sides of the tray.  We used a 15cm x 30cm tray in this recipe.

Step 2:

Break each of the Tim Tams in half and place them all into a food processor.

Step 3: 

Process for only about 5 – 8 seconds until the biscuits resemble large crumbly chunks.  Transfer the processed Tim Tams to a large mixing bowl.

Step 4: 

In a microwave-safe container, combine your condensed milk and butter (chopped up to make heating quicker).  Microwave on high in 30 second intervals, stirring in between, until all of the butter is fully melted.

Step 5:

Pour the condensed milk / butter mixture into the mixing bowl with the crushed Tim Tams and mix together.

Step 6:

Scrape the Tim Tam Slice mixture into the prepared baking tray and smooth out the top.  Put in the fridge.

Step 7:

Put the chocolate melts and olive oil into a microwave-safe container and microwave on high for 2 minutes.  Stop every 30 seconds to stir and check.  (Tip: the olive oil is an addition which helps stop the chocolate from cracking later when it is cooling).

Step 8:

Pour the melted chocolate mix over the top of the Tim Tam Slice, smoothing out evenly with a spoon or spatula.  Pop the slice back in the fridge to cool.  We recommend leaving in the fridge for between 4-5 hours to make sure it is fully set.

When the slice has been fully cooled, cut up and serve!  And there you have it – the perfect Australian slice that is simple to make and your family will absolutely love!

Term one has flown by and now it’s time to think about relaxing for the extended weekend.

Here are 3 of our favourite tasty Easter treats you can serve over the long weekend. A definite plus is that they’re all chocolate-free (because there’s probably more than enough of that arriving from the Easter Bunny!).

Best of all, Brisbane kids can easily help prepare all 3 of these dishes, which usually means they’ll help eating them too. We’ve included some ideas about steps Brisbane Kids might like to help with, but you know your kids and their skills better than we do.  We’ve also included some ideas about how you might like to change up these recipes based on your tastes and what’s available near you.  

Eggy Carrot Wraps

These tasty wraps are fairly healthy and easy to make. They can be made a little ahead of time and stored in the fridge ready for your little bunnies to eat when they want a break from the chocolate. 

What you need:

  • Round flatbread wraps, cut in half
  • Hard-boiled eggs
  • Mayonnaise
  • Carrots, grated
  • Lettuce
  • Salt and pepper to season to taste
  • A few sprigs of parsley (to serve as carrot tops)

Eggy carrot wrap filling

Method:

Peel and mash the hard-boiled eggs roughly with a fork. Add the mayonnaise and grated carrot and stir until combined, seasoning to taste. 

Place some of the egg mixture on your half wrap with some lettuce and a sprig of parsley making out on the round side.

Roll your flatbread into a cone shape and your ‘carrot’ is ready to eat!

Peeling and mashing eggs

Grating carrots

Stirring the mixture

Washing lettuce

Rolling the wraps

Change it up:

You can mix up the fillings to your taste. You could try salad wraps with avocado, or curried egg wraps, or even add in some grated cheese or tuna if that’s more your thing!

Crisp, fresh vegetables and yummy dips – you can’t go wrong with this healthy platter to counteract the sweet consumption over Easter!

What you need:

  • Carrots
  • Cucumber
  • Capsicum
  • Hummus
  • Smashed avocado

Method:

Slice the veggies into finger-sized pieces.

Arrange in a circle on a round plate.

Add hummus and avocado to the centre.

Dip and enjoy a very tasty but delicious food platter!

Washing and preparing vegetables

Cutting (younger kids can cut cucumber halves with a butter knife)

Preparing dips

Arranging veggies on the platter

Change it up:

Choose vegetables that you know your Brisbane Kids will enjoy or might try. Other options include celery, tomatoes or radishes.

Mix up the dips! Use your favourites. 

If you have a sweet tooth, you could try a fruit platter with things like banana and strawberries and have peanut butter and/or Nutella in the middle as a dip.

Fairy Bread Hot Cross Buns

Yes! We’ve made hot cross buns event sweeter with this super-cute method for turning them into the ever-popular treat – fairy bread!

What you need:

  • Hot cross buns (mini size if possible but any will work)
  • Butter or spread
  • Sprinkles

Method:

Fill a plate or dish with sprinkles.

Halve the hot cross buns. Spread the inside with butter. 

Press the buttery surface into the sprinkles.

These are best eaten soon after making them (and good luck trying to get them to last!).

Change it up:

You could create a hot cross bun buffet with different spread and topping options (use peanut butter or Nutella instead of butter) and top with slices of strawberry or banana, or try grated chocolate or crushed up easter eggs instead of sprinkles.

These delicious cookies have just two ingredients, but can be added to with anything you have on hand to mix things up and make them extra yummy! What’s more, they don’t contain flour or added sugar, so they’re super healthy, and yet still deliciously sweet!

So if you’re looking for a tasty new treat to try, this easy peasy recipe is a great option and really fun to make with kids. They’ll love thinking of extra items to add to their own cookies to personalise them to their taste and make their mouths water!

What You Will Need

Ingredients

  • 2 small very ripe bananas
  • 1 cup oats (use gluten-free oats if required)

Optional extras

These cookies are great with just the two main ingredients, but if you want to make them even more special, why not add a little something extra? We made some plain, some with pumpkin seeds, some with raisins, and some with chocolate chips!

Just a small scattering of each is enough to boost the flavour and variety. Here are some options to try, but just stick to one or two per batch or per cookie, not all at once! And feel free to experiment with your own ideas too!

  • 1/2 tsp ground cinnamon
  • 1/2 tsp ground nutmeg
  • Raisins
  • Pumpkin seeds
  • Chocolate chips
  • Chopped nuts
  • Sprinkles
  • Dried coconut
  • Sesame seeds
  • Dried cranberries
  • Sunflower seeds
  • M&Ms
  • Cocoa Powder

How to Make Two-ingredient, No-flour Cookies

Step 1

Pre-heat the oven to 180°C and line a baking tray with baking paper or a reusable baking sheet.

Step 2

Peel the bananas, put them in a mixing bowl, then mash them with a fork until smooth. The more ripe the bananas are, the easier they will be to mash, and the sweeter the cookies will taste!

Step 3

Add the oats to the banana and mix the ingredients together. You will get a slightly different texture of cookie depending on whether you use traditional whole oats or smaller-cut quick oats, but both are equally tasty!

Step 4

Add in any optional extras. You can add these to the whole batch of cookie dough, or in small amounts to separate cookies to experiment with a range of different varieties.

Step 5

Arrange spoonfuls of the mixture into cookie shapes on the baking tray.

Step 6

Bake for about 15 minutes, or until golden brown. The cooking time will vary slightly depending on what types of oats you use, so be sure to check on them. Then leave to cool before eating!

These cookies turn out crispy on the outside and chewy on the inside. Using just fruit and oats, they can even be enjoyed as a breakfast alternative, especially if you need something quick and easy to enjoy on the go. They will keep in an airtight container for up to two days. They can also be frozen, making them a great option to have on hand for lunchboxes.

What You Will Need

Biscuit / cookie / biccie recipe ingredients

Ingredients you will need:

  • Milk arrowroots (or other similar plain biscuits)
  • Icing sugar
  • Marshmallows (assorted sizes is useful)
  • Cake decorations, such as sprinkles and writing icing

How to Make

Step 1

Create the bunny decorations, such as the tails, ears and bunny feet. For the tails, you can use half a mini marshmallow, squished to make it fluff out.

For the rabbit cookies, make the ears by cutting a large marshmallow in half, then half again (see pic).

For the hopping bunny cookies, you can make the feet by cutting a marshmallow in half, then decorate each half with paw pads. For this, you can use coloured writing icing or simply stick on some assorted sprinkles onto the sticky cut side of the marshmallow. You could stick with the same colour throughout, or try some different combinations to create a rainbow of colourful bunnies.

We managed to find a jar of assorted sprinkle shapes called Unicorn Confetti Sprinkles (available in both of the main supermarkets) that worked really well for this recipe.

Step 2

Next, make the icing according to the instructions on the packet. Try to make the icing so that it’s not too runny, so it doesn’t drip off the biscuits. Then ice the biscuits. You can use a blunt knife or the back of a spoon to spread the icing over each biscuit.

Step 3

While the icing is still a bit wet, add the ears and tail for the rabbit cookies, and the feet and tail for the hopping bunny cookies.

For the rabbit cookies, you can use writing icing or chocolate chips to create the eyes.
